Red Beans & Rice (Crockpot Style)
This is how I make my red beans in the crockpot keeping that same southern flavor. Throw everything in the crockpot in the morning and by dinnertime? Just make your rice and cornbread and call it a day. Let’s get into this recipe.
What You’ll Need:
- 1 lb Camellia red beans
- 1 pack smoked sausage, sliced
- Smoked meat (like turkey neck or leg or hamhock)
- 1 small onion, diced
- 1 small green bell pepper, diced
- 2 ribs celery, diced
- 6–8 cups of water
Seasoning:
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp Tony’s Cajun seasoning
- 1 tsp dried oregano
- ½ tsp dried thyme
- ½ tsp paprika
- ⅛ tsp cayenne pepper (or to taste)
- Salt and black pepper to taste
⏱ Time-Saving Tip:
Don’t feel like chopping? You can use a frozen Cajun-style Mirepoix blend (onions, celery, and bell pepper). I grab mine from Kroger to save time. I love a shortcut when it hits the same!
How to Make It:
- Rinse and soak your beans overnight. (You can do a quick soak if you forget.)
- Slice the sausage and dice your onion, bell pepper, and celery.
- Add everything to the crockpot along with your smoked meat.
- Pour in 6–8 cups of water , just enough to cover everything.
- Add all your seasonings and give it a good stir.
- Cover and cook on high for 6–7 hours or low for 8–10 hours.
- About 20–30 minutes before it’s done, mash some of the beans right in the pot to help it cream down.

- Hot, fluffy rice
- A side of cornbread
- A cold drink after a long day
